Ingredients:
- 1/2 cup LivUp foxtail millet
- 1/2 cup chickpeas (soaked overnight)
- 4 tbsp oil
- 2 tbsp butter
- 1 cup chopped veggies (onion, bell peppers in green, red, and yellow, sweet corn, broccoli, or your choice)
- 1 cup iceberg lettuce
- 1 tsp black pepper powder
- Salt to taste
- 1 tsp oregano mix
- 1 tbsp extra virgin olive oil
- 2 tbsp lemon juice
Instructions:
For the Dressing:
- 1 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1/2 tsp black pepper powder
- 1/2 tsp salt
For the Salad:

Rinse the foxtail millet 3-4 times and soak in water for 3 hours (soaking is optional). Boil the millet with a pinch of salt and 1 tsp oil on medium heat for 10-15 minutes until cooked.

Cook the soaked chickpeas in a pressure cooker for 4 whistles on high heat.

Sauté the chopped vegetables with butter, salt, and black pepper for 5 minutes.

In a salad bowl, combine the cooked foxtail millet, sautéed vegetables, and chickpeas. Add the dressing, sprinkle with oregano mix, and adjust seasoning with salt and pepper. Mix well. For extra protein, you can add chicken or paneer if desired. Garnish with fresh coriander and serve hot.
